When I paste over some text in the Java editor, and do a few other
additions, as I Ctrl+Z to undo what I've just done, I noticed that the text
is replaced one line above where it should have been, which screws things up
(obviously).

Just did a quick search of Bugzilla and found this bug
https://bugs.eclipse.org/bugs/show_bug.cgi?id=61171, which sounds
similar to the problem that you are having. It has been fixed in today's
build.
