Once I can get the basics in I figure I can come up with better and more
targetted questions as to how to proceed.

The best help is included within Eclipse itself when you install the
various plug-ins you're interested in. An online version of this help,
with most of the Eclipse Foundation plug-ins represented is available
here: http://help.eclipse.org/help31/index.jsp

You'll probably be interested in the "Getting Started" sections of the
Workbench User Guide and the Java Development User Guide.

It doesn't look like the CDT's help is integrated into the online site.
You'll have to look at their webpage for info on that if you're
interested in C/C++ development - http://www.eclipse.org/cdt/

promising-looking FAQs and Tutorials which may help you out.
