There is probably an easy way to do this, but its killing me so far. Every time I want to push my project I right click my project and go Team -> Remote -> Push and I'm greeted with a dialogue that looks like this:

Which never saves my details. Is there any way to save the details of the remote repository? Or am I going about this all wrong?

The command you're using is specifically intended to push to an arbitrary remote. That's the purpose of the dialog. That's also why there's a "..." at the end of the command name.

Use "Team -> Push to Upstream" (or, even easier, the corresponding toolbar item) to push to the default remote.
