I'm using 3.0M6 and the cursor in the Java editor is some kind of left
bracket. I can't find anything in the Help about changing the cursor.
How do I get back to the normal cursor?

Hit the insert key to rotate through the different modes of the Java editor
"Left bracket" means you are in Smart Insert mode.
Note that the mode is indicated by the cursor and in text in the bottom
right of the editor.

Thanks. That was it. Smart Insert must be a v3.0 feature.
