These look like good articles for advanced topics, but I am looking for
material that helps a new user get started and explains the non-obvious
parts of the interface. As an example, I started a thread "Undo and redo
buttons: how to add to toolbar" to ask about one of the parts of the
interface that was non-obvious to me, and for which I could not find an
answer when I looked through the material at

From the site you mention above (or from the Eclipse Help contents
launched directly from Eclipse itself), I'd recommend starting with the
Getting Started sections under Workbench User Guide and Java Development
User Guide. Those tutorials will go a long way to helping you understand
how it works.
