I have tried unchecking the "Always show Quick Diff coloring" button in the
Quick Diff preference tab of the Text Editor preferences page, but all the
editors still open with quick diff enabled.

Different editor's have their own preferences. For the Java Editor, look
at Java->Work in Progress (same option as for the Text editor).
