The number one is integrated into the help: Eclipse Help-->Platform Plug-in
Developer Guide (or in web: http://help.eclipse.org/help21/index.jsp).
Also you can find a lot of articles on http://www.eclipse.org
The 'Plugin Project' wizards also generates you working code demonstrating
simple concepts (editors, views etc.).
