I've installed RC1 and I can create SWING and AWT gui's but I can't find
an option to create SWT or RCP plugin guis.

File->New->Other->Java just gives me

AWT and SWING options?

You're actually looking for the File->New->Java Visual Class menu item.
This will prompt you with a wizard that will let you create all of the
mentioned types.
