In the subdirectory where the Eclipse executable lives, you can
carefully edit configuration/.settings/org.eclipse.ui.ide.prefs.
Look for RECENT_WORKSPACES. The list is newline-delimited.
This should not happen often. It's been years since I found the need to
edit this list and I had to look around to remember how to do it.
