Hello,

When I right click on an item I can open a file with the system editor.
Under Windows I could right click the desktop's file and set properties
and associate a file type to edit it with say gvim.

Now I am on Ubuntu Linux 11.10 and would like to set the default editor
to gvim rather than gedit. How can I accomplish this so that when I right
click on the file and open it with the system editor in eclipse I get gvim
instead of gedit?

Eclipse is just telling the OS to "open" the file, after that it's out
of Eclipse's hands how the OS decides to handle that particular file.
Your question is really, "How do I change the default system editor for
a certain file in Ubuntu 11.10?"
