Now that I have both the JDT and CDT "versions" of Indigo downloaded... so I could always just "start over" with the JDT "version" and then add CDT to it... but for the life of me I can't figure out how to go the other way around (meaning if I already have CDT installed, why can't I simply add the Java Development Tool to it?).

There is no reason as far as CDT is concerned. You just need to install JDT from the right location and I'm not sure where that is. Good question for the JDT forum.
