It would be nice to have one, as we do automated build
every night, and we have to write the ant script
manually for every project (or subproject). This is
really tedious.

Have you tried the PDE support for generating the build.xml?

Ensure that your project is a PDE project (you can convert:
File>New>Other>Plug-in Development>Convert Projects to Plug-in Projects)
Select the plugin.xml of the project, right click to realize the context
menu>Create Ant Build File
