I have Eclipse (Java EE Edition) installed and Glassfish (the open source v3.1 server). I want to be able to import and use the Java EE Sample projects from within Eclipse, however, when I try to import them, Eclipse seems to be looking for JARs, WARs, or EARs. Any guidance would be welcome.

Try asking on the Web Tools (WTP) forum group.
