I am looking for a list of companies that currently use Eclipse Infocenter for their consumer-facing Help.

I see that Citrix does. Others?

IBM, Alfresco, Sybase, ARM , Nokia, Jive, and many more. Try a google search like documentation inurl:index.jsp inurl:topic to see some of those offered online
