Eclipse Classic contains Java and Eclipse plug-in development coverage
rolled into the package.
Eclipse Java is just Eclipse for developing to Java.
Eclipse JEE is Eclipse for Java enhanced for developing web applications
in Java using a number of popular technologies.
There are myriad other Eclipse pre-rolled packages, for C/C++, PHP, and
others.
Most of this is noted in the "details" link under each download.
You can more or less download any of these packages and fill it
post-install with other technology as you wish. (See menu Help ->
Install New Software).
