I'd like to reuse the geoshapes, but I'd only like to provide a subset of
shapes (RoundedRectangle, Rectangle, Triangle), and I'd like to refer to
them by "Person", "Country", and "Organization", as well as declaratively
specify their color, size, etc. How would I start going about this?

Thanks,
Liam Morley

Well, this sounds like extended GMFGraph model with custom templates to
generate GEF IFigure code.
