the user guide in the wiki is used to describe the state of the HEAD in the
EGit repository. It is in fact the place where the contributers create the
documentation of new features.
You may find the documentation of 0.7.1 in the help of your IDE.

The Replace with" -> "File in GIT index" came in after 0.7.1 was released.
You may try the nightly build:
http://download.eclipse.org/egit/updates-nightly/ (It is quite safe to use
the nightly build).
