If you do this keep in mind that the project structure has changed
between 2.0.1 and 2.1 i.e. new features and projects have been added. It
will also not be faster since the source drop did not contain the CVS
meta info.

You could check out all the source via CVS and build Eclipse yourself, but
I'm not sure that that would be any faster than just downloading the normal
ZIP file.
