As I understand it gmf is just an easier way of creating a gef project,
where all the leg work gets done for you. If I wanted to quickly create a
gef type project without having to learn all the details of gef would gmf
be a better option?

If I'm wrong, please correct.

If I'm right, please point me towards a good gmf tutorial.

There is a GMF tutorial found here:
http://wiki.eclipse.org/index.php/GMF_Tutorial

Your opinion of its "goodness" would be welcome.
