I haven't got as far as having a running 0.8.1 yet, but ....
When moving forward an OSEE version (e.g. 0.7.0 to 0.8.1) and where there
are multiple users, is it required that the system be taken down and all
users moved to the new client or, if not, which of the following options
is preferred:
a) Update the OSEE application server to the new version and gradually
update the clients
b) Gradually update the clients and finally update the OSEE application
server when all clients have been updated

Two or more versions of OSEE (e.g. which have incompatible database implementations such as is usually indicated by a version number difference, e.g. 0.7.x, 0.8.x, 0.9.x) may be run in parallel. Simply use a different port number for the OSEE application server in both the server and client configuration, and point the application server at a different database using its connection.xml.
One can be used "read-only" while users are migrating. When all users have migrated, the old version may then be taken off-line.
