How can you get the grid column headers to wrap their text?

GridColumn.setWordWrap(true) doesn't seem to do anything so I'm guessing
its just for the non-header cells.

Correct. Word wrap is currently only applicable to cells not headers.
You can enter bugzilla issue and I'll look to add it to headers.
