Also, it would be great if someone could let me know how to create a new

Have a look at:
http://eclipse.org/swt/faq.php#pocketpclibrary

There should be everything you need for SWT Table and List in the jar on the
download page. Can you be more specific about the problems you are finding?

You may want to look at the version of eSWT provided by the eRCP project at
www.eclipse.org/ercp

profile.
The swt.jar sure has the Table and List class. The problem seems to be
with the swt dll file which does not seem to have been updated.

Any pointers?

This sounds like a bug - can you file a bug report against Eclipse Platform
SWT?

You could try recompiling the dll using build.xml found in
org.eclipse.swt\Eclipse SWT PI\win32\library.

However, this dll is rebuilt every week using this script so it is unlikely
to fix your problem.
