Hi Matt,
you don't need a product config for each platform. The features defines
like org.eclipse.rcp which fragment is needed for a platform.
If you install the RCP delta pack from Eclipse, you can export RCP
application for different platforms.
You can get the delta pack for 3.2.1 here
