I don't know whether this is what you want to know ...
May you found what you want on the "Branding" page of your product.

In the branding page of the product, we can only
specify the splash screen image.

The title of the splash window cannot be set there :(

The windows title that appears on the task bar should be the same as the
"Launcher Name" (name of the executable).

However, if you start the RCP application out of the Eclipse IDE, the
window title will always be "Eclipse".
