As a real open source project we have very little knowledge what our users are doing with it. I know of real world use cases. For example Noa Power is using Eclipse 4diac in their electrical power distribution components. Amirimi is doing optimisating control algorithms for burning processes (see https://www.youtube.com/watch?v=TnP4f-2osio for details). A similar use case is done by hito robot group for cement mills. These are a few public use cases I know and I'm allowed to talk about. Does this help you?
