Is there a list of 'standard' features or options, not sure what they would be called, that could be sent to the broker?

For example, a plug might have 20 different variables it could send to mqtt on a status update. Another device might have similar but also different variables.

Is there an established list or standard variables or does mqtt simply accept everything?

MQTT is just above the transport protocol. In the OSI model it is actually session-level.
You are asking about presentation-level features.
That would be on top of MQTT, like Sparkplug B (google it). You can also see https://mqttlab.iotsim.io/sparkplug for details.
