I have Juno ... can I upgrade straight to Mars, or must I upgrade to each version in turn (Kepler, Luna, Mars)?

The best bet is to just download the version you want, install it into a new location (NOT on top of your existing installation), then start it up and point to your existing workspace.
If you had installed any third-party plugin into your old version you'll have to find the updated versions of those and install into the new Eclipse version.
