Hi, I'm a recent CS college graduate, and I'm interested in contributing to an Eclipse project, but don't know where to start. Any suggestions?

Which project(s) are you interested in and which aspect(s) of that
project in particular?  Most projects maintain lists of open bugs
(some of which are enhancement requests) in bugzilla, i.e.,

generally much appreciated.   You'll need to find out where the
project maintains its source repository. Most are migrating or have
