Try installing the 32-bit version. I was getting the same error message every time I tried to start Eclipse, and this fix worked for me. I, too, am running fully-updated Windows 7 and had Java 7 already installed. Even though my machine is 64-bit, the version of Java I have is apparently 32-bit. If you have 32-bit Java, you have to use 32-bit Eclipse.

I suppose you could upgrade Java to 64-bit instead, but I'm not willing to try that now that I finally have Eclipse running!!

Also, there's no "demo" version. It's Open Source.
