Hi,
I'm evaluating the use of zest to visualize and edit a moderately
complex cyclic directed graph (a few tens of nodes and an average of
three connections leaving each node).
I would like to understand how mature is this product.
I found documentation to be rather sparse (not a problem unless this is
an hint the whole lib is not ready for usage) and, in particular I found
no way to modify visualization (e.g.: use ellipses for nodes and/or
change colors)
Can someone comment, please?

I think you only asked at the wrong forum. Zest is a subproject of GEF
so you hopefully get a better response on eclipse.tools.gef.
