Do mylyn contexts keep track of open projects? I'd like to be able to have the current set of open projects restored when I switch tasks (including closing projects that are unrelated).

I'm using 3.5.0.I20110301-2328 with Eclipse 3.6.2.

Mylyn does not store the state of workspace projects as part of the context.
You can refer to this enhancement request for more background:

170232: [context] context should include open/closed state of project
