I'm wondering if there is any information out there surrounding:
Eclipse's market usage as a java IDE, and if there's information surround how often it is installed on each OS.

More specifically, I want to know how the number of installations on Windows and Linux compares to that of Mac OS.

There's no real way to know how many installations are in place, mostly
because Eclipse "installation" is just extracting an archive file. The
main downloads page has total download numbers for each package, but not
broken down by paltform; if you send an email to webmaster they might
have that information to share.
But even knowing that is only a rough approximation, since there are
numerous third-party packages of Eclipse, including ones that Linux
users install via the various package managers like yum, rpm, etc.

It may not be open to such surveys or market share analysis, but those who
activate UDC (Usage Data Collector) in Eclipse at least do provide some of
that even if they only "unzip" Eclipse and don't formally register.

Another option could be download hits by Update Sites / P2 repositories, but
unlike commercial vendors who charge for some updates this may not be a high
priority at Eclipse.org.
