I would like to create an update site. However, instead of one jar, i would like a directory which contains all the plugin info. When i click 'build all' in my project update site, it converts the plugin into one jar file. How can i make it use a directory structure?

The update site will always have the .jar (that's for download).

Your feature can specify "unpack the plugin" on a per feature basis.
