I am trying to use ZestStyles.CONNECTIONS_DASH or CONNECTIONS_DOT but none
of these seem to work except CONNECTIONS.DIRECTED and CONNECTIONS.SOLID.

If i use DASH or DOT, it still shows up as a solid line. Any help?

What works for me is to use the SWT styles, e.g.

edge.setLineStyle(SWT.LINE_DASH);
