I have tried downloading the most current version of eclipse it doesnt give me an app to open. It also doesnt show up in my applications so I am able to use the app as I launch it from installer but after that I cant find out how to open it again.

Look carefully at the second page of the installer to see where it's being installed. The default is to install in your home folder. E.g., on Windows into D:\Users\<user>\eclipse\java-2023-12

I don't recall if creating shortcuts works on the mac and I assume you are talking about mac...
