OK I got it.
It was in the doc :-)

primary plug-in: org.eclipse.platform
file: plugin.properties

Next time, I'll try to read the doc before asking ...

You need to make a "primary feature" consisting of a branding plugin.
Then, install it with Eclipse and change the value of eclipse.product in
configuration\config.ini to be your new primary feature. The platform
will use the Plugin Name of your primary feature's plugin to brand the
platform.

This process is not straightforward and I'm sure I haven't given you
enough info to succeed - unfortunately there are no real guides out
there for 3.0 yet. I have finally managed to get this working and I was
going to write one when I had time in a couple weeks, but some of my
final questions have gone unanswered so I am unsure if I am doing it the
*proper* way for 3.0. I have a feeling I have a few unneccessary steps.
I'm waiting for official documentation to verify my procedure.

Your best bet is to read the Help section Platform Plugin Developer
Guide > Programmer's Guide > Packaging and Delivering Eclipse Products >
Customizing a product and replace any talk of install.ini with
configuration\config.ini. That should get you started.
