Like you, I'm now using dual monitors, but rather than maximizing
Eclipse in one monitor, I stretch it across both monitors. I have the
editor and task views on the right hand side taking up most of that
monitor. And the other views such as Package Explorer, Outline,
Bookmarks, etc. on the left. This works out very well for me and allows
the Editor to be large enough so that I can vertically split it into two.
However, unlike you, both of my monitors are the same size and resolution.

You can also open two Workbench windows (Window > New Window) and put one on
each monitor.
