I have a plug-in that declares ant tasks in the plugin.xml. Everything works
great.
When I'm using the ant editor I can use completion and find my task. No
problem there either.
However I would like to know where I should provide the task description to
it gets diplayed to the user while using completion.

You cannot.
Currently the task descriptions are not extensible and are a static set
defined in the Ant UI plugin.
