completely unrelated projects, having them sahre the same workspace is not

You can have as many launch configurations on the run icon as you wish.
One for each main in your entire workspace, if you like. All of them
will show and you just pick the one you are interested in at that time.
There is no problem with unrelated launches being shown.
However, if you want to keep everything totally separate, then you need
to use separate workspaces, which is what the -data is for. The problem
with that is your common preferences will need to be set in each
workspace, rather than sharing them all in one workspace.
