Does anyone think eclipse is a good tool for editing jsps? And if so,
how is this done? is there a plugin required?

The Eclipse WTP project is decent. There are a few quirks, but it is
quite usable, and far better than anything else I've tried, particularly
if you are using a 1.5 version of Java, which allows you to debug the
..jsp itself (single-step, etc).
