Hi. I'm using eclipse 3 (gtk/linux)

I know it's a stupid question, but eclipse 2 had an option for
specifying the default project directory, and now in version 3 I can't
find it anymore...

Is is possible to change it or not?

Yes. Here's how I did it on Eclipse 3.1M6
running on Windows XP:

(0) Exit Eclipse.
(1) Find the file "org.eclipse.ui.ide.prefs".
(2) Open it with a simple text editor.
(3) Find SHOW_WORKSPACE_SELECTION_DIALOG
(4) Change it from "true" to "false".
(5) Save the file and close the editor.
(6) Restart Eclipse and the Workspace Launcher will appear.
(7) Choose the desired workspace.
(8) Check "Use this as the default and do not ask again".
(9) Click OK.

Explanation:

New installations of Eclipse 3.1 (and 3.0 also, if I
remember correctly) display the Workspace Launcher
dialog when Eclipse is launched. The user is asked
to "Select a workspace" for the session from a list
that can include the most recently used workspaces.
(A user can also type in or browse for a folder to
use the "Workspace" field.)

This dialog has a checkbox for the option "Use this
as the default and do not ask again". When checked,
the Workspace Launcher no longer appears when
Eclipse launches.

The Workspace Launcher is also available while
using the Eclipse workbench. From the menu bar,
choose File, Switch Workspace. Unfortunately,
if Eclipse was told "do not ask again" it obeys
all too well. The "Use this..." checkbox will not
be available!

(So, maybe the user does not want to set a
default after all.)

Or you could simply go to Window->Preferences->Workbench->Startup and
Shutdown and check "Prompt for workspace on startup" But your way's
good too. :D

The problem is that the checkbox is on...

Golly, I rummaged through the Eclipse HTML docs
and never did find that. Grr. ("Preferences", eh? Doh!)

Oh, and in my Eclipse installation (3.1M6) "General"
is substituted for "Workbench". Other than that,
your way is MORE than good.
