Hi

I want to understand the philosophy and concept behind the Philips Hue Binding. There are channels for its bulbs but they are at abstract level. They do not directly map with the all properties of bulbs which Philips Hue Bridge provides.

I want to learn why this design was incorporated in the current binding of Hue. What are its advantages over UI applications and how would it simplify things in future?

What if the binding had mapped each property to a separate channel, like CHANNEL_ON to on property of bulb, CHANNEL_COLOR to color, CHANNEL_BRIGHTNESS to brightness and so on.

This does not seem to be a question about the hue binding, but about the item types in general. Have a look at https://www.eclipse.org/smarthome/documentation/concepts/items.html, which defines the basic building blocks of Eclipse SmartHome - bindings are supposed to use these and this is what the hue binding does.
