I've installed some different Mars M6 IDEs using the Oomph installer.
Now I would like to update this installation to M7 without have to repeat the entire install process one by one.

How could I accomplish that ?

It's best to ask about Oomph, on the eclipse.oomph forum...

You'll have to wait until M7 is out, end of this week I think... At
that point a regenerated product catalog will be available to point to
the M7 update site.

On the Help menu there is a "Perform Setup Tasks..." menu item. This
will let you repeat things like the P2 task used to install the product,
and if there are updates at any of the sites involved, those will be
installed into that IDE. So you should wait until later on Friday and
give this is try...
