I'm not entirely sure, but I think you can't influence that as Eclipse
only uses 16x16 pixel icons and I didn't ever see an option to change
that or their appearance.
I'm using Eclipse on 1792*1344 and can work fine with the current icon size.

The icons are stored in ${ECLIPSE_HOME}/plugins/org.eclipse.ui_3.0.0/icons/full
so you could just change the files there. I'm not sure if the new icons would
then be scaled to 16x16 though.
