This is correct, every change on the model is recorded as one operation.
If you have a databinding which writes to the model on every keystroke
it potentially means every keystroke is recorded as an operation. You
could avoid this by changing the update policy in the databinding.
Nevertheless EMFStore will record every change you do one the model
while you change the model. This is fundamentally different from e.g.
EMFCompare which derives the changes after they have been performed.

There is advantages and drawbacks to both - change-based/operation-based
Versioning (EMFStore) and state-based Versioning (EMFCompare).

Yes, it could be. Currently the implementation of the operation list is
based on EMF. Changing it to an optimized list for this purpose would
definitely speed up things significantly. Maybe this is a contribution
you could make or you could sponsor an open-source implementation.

This is related to operation-based versioning as mentioned above. I know
of non-open-source extensions to EMFStore which later consolidate the
list of operation by canonizing multiple related changes into one, but
there is no open-source solution to my knowledge at this point.

We have customers using huge diagrams with EMFStore. Mostly they use
composite operations to wrap all the small operations related to a
diagram change into one composite operation. Nevertheless there will be
many small operations in the composite. It just helps with atomicity in
conflict detection/merging and with visualization.

See my comment above. With composite operations you can make
visualization a lot more compact and usable.
