Hello,
I have moved all my projects to another location and Eclipse cannot find
them when I open the workspace. Is there a way to fix that, i.e. replace
the old location with the new location everywhere? I have no idea where the
the project references are stored within the workspace.

Whether you create a new workspace or reuse the old one, you'll have to
import all those projects from their new location into the workspace.

Please note that a project does not have to live in the workspace
filesystem.

Note also that if you reuse the old workspace, you'll want to delete the
projects that are missing from the workspace (right-click and choose
Delete).

Is there a way to delete all missing projects in a workspace without
deleting each of them separately?

Sort of. You just start a new workspace. There's probably not a great
deal except workbench layout you'd want to keep from that old workspace.
