This feature is called direct-editing. In the logic example (also in flow
and ediagram examples), you can enable direct-editing by selecting an
editpart and then clicking on it (same as you do in windows explorer for
renaming) or by pressing F2.
To see how it's implemented see LogicLabelEditPart#performRequest().
