Using annotations in the ecore model, can we prevent for a specific
EClass the table creation?

Hi Gilles,
You can add the @Transient annotation in the EClass eAnnotations.See here for more info on jpa
annotations in the model:
http://www.elver.org/hibernate/ejb3_format.html
