I'd like to extend the generated metamodel of an Xtext grammar with methods.

I followed the blog post on Christian Dietrich's Blog (the forum doesn't allow me to post links, sorry) and implemented a post processor as proposed.

The first comment also notes it is possible to extend a manually maintained model by specifying the srcPath in the EcoreGenerator component.

Is there any way to add custom extensions when inferring/generating the metamodel from the grammar (using EcoreGeneratorFragment) in Xtext?

there is no out of the box functionality for that you would have to patch parts from
org.eclipse.emf.mwe2.ecore.EcoreGenerator into org.eclipse.xtext.generator.ecore.EcoreGeneratorFragment
