Is there an easier way to get a project to be exported as a war without having
to right-click and doing export-war-yes/overwrite everytime?

Try to create a file called build.xml. After that, open that file on Eclipse
and try to edit it...
All you need is to use content assist from Eclipse and a bit of intuition :)
